Starters Seared shrimp Smoky emulsion of cabotiá squash and faux bisque caviar. Steak tartare, knife-edge style Dijon mustard, black tucupi, and toasted handmade brioche. Main courses Golden, glazed chicken Silky green corn porridge and fresh maxixe vinaigrette. Medallion of filet mignon Potato mille-feuille, écha lotes brûlées, and red wine demi-glace. Desserts Panna cotta with cumaru Macerated red berries. Airy chocolate mousse Fresh orange and crunchy chestnut tuile.
